Blueberry Fool


This is a very quick and easy recipe that has always garnered many compliments -
perfect for a light dessert when blueberries are in season.


BLUEBERRY FOOL
Makes 6 servings


-1 pt blueberries
-1/4 c. sugar
-1-1/2 tsp cornstarch
-1 tsp grated lemon peel
-1 pk. ( 3 oz ) cream cheese
- 1/4 cup powdered sugar
-1 tsp vanilla
-1 cup heavy cream


Place blueberries in a medium-size saucepan; mix sugar & 
cornstarch; sprinkle over berries.  Cook over medium heat, stirring 
often &   crushing a few berries, until mixture thickens slightly & 
bubbles 1 minute.

 Remove from heat; cool completely.  Pour into a 4- to 5-cup glass bowl; cover; refrigerate several hours.     

To serve, beat cream cheese until soft in medium size bowl with electric hand mixer; blend in powdered sugar & vanilla; add cream & beat until soft peaks form.                                                

Spoon cream mixture on top of blueberries; then gently fold in, leaving streaks of blue & white.  Sprinkle with additional lemon rind, if you wish.  Refrigerate until serving time.

  2. I usually double the recipe, Icy, since my testosterone boys, at 6'4" x 2 ( only the oldest is shorter ) devour it, leaving nothing for the chef ( of course, I lick the bowl! ).
